The same open-pan Kolhapur gur, worked coarser: free-flowing golden granules that scoop and pour the way sugar does, and dissolve without clumping. Nothing bleached, nothing added — cane juice boiled down in an open pan and granulated as it cools. Keep a jar beside the chai tin; it is the simplest way to leave refined sugar out of the daily cup.

Granules and powder come off the same pan; only the grind differs. Nothing is separated out at either stage, so the iron, calcium, magnesium and potassium of the whole cane stay in the jar, along with the caramel depth that refining deletes.
